Choosing a Smart Combi Oven for a Commercial Kitchen
A commercial combi oven combines convection and steam cooking. Connected controls and saved programmes can be useful, but the right oven depends first on your menu, peak output, space, utilities and staff workflow. Features and compatibility vary by model and software version.
The photo above shows a UNOX CHEFTOP oven recently fitted in a commercial kitchen. It illustrates the kind of site planning discussed below; it is not evidence of a particular performance or energy-saving result.
Work backwards from the kitchen's output
Document tray format, portions per service, cooking cycles and recovery needs at the busiest time. Check whether a single oven can handle overlapping tasks or whether a second unit would provide more flexibility. Ask for a demonstration with your own menu before committing to a model.
Check the installation, not just the oven dimensions
Measure the delivery route and allow room for door opening, safe loading and maintenance access. Verify the proposed unit's electrical or gas supply, water quality and treatment, drainage and ventilation against the manufacturer's current installation instructions. Do not assume a replacement unit has the same connections as the old one.
Compare controls and connectivity in a real workflow
Ask staff to try the programmes they would use every day. Confirm how recipes are saved and updated, whether the site has suitable network access, and what happens if connectivity is unavailable. Remote monitoring and automated cooking features should be checked against the exact model and configuration rather than assumed for every oven in a range.
Plan cleaning, training and aftercare
Compare cleaning cycles, approved chemicals, daily tasks and consumable costs. Include commissioning, operating instructions, warranty information and routine maintenance in the handover. Keep a record of the installed model and serial number so the right parts and technical information can be found later.
