Confirm why the equipment is being replaced
Start by separating the immediate fault from the wider requirement. The right response may be a direct replacement, a capacity change, a different equipment type or a broader kitchen upgrade. Record recurring faults, maintenance history, changes in menu or volume, and any operational limitations of the existing unit.
Survey the site before final specification
