
Commercial Kitchen Fit-Out: From Equipment Brief to Handover
A commercial kitchen fit-out needs more than an equipment list. The layout, stainless steel, utilities, ventilation, access and installation sequence must work as one plan if the finished kitchen is to be safe, practical and serviceable.
Turn the operating brief into a coordinated layout
Begin with the menu, production volumes, service pattern, staffing and storage requirement. Map the movement of food, people, utensils and waste through the kitchen. The layout should support that workflow while leaving enough room for cleaning and maintenance.
Develop the equipment and stainless steel schedules together
Cooking, hot-holding, preparation and warewashing equipment should be coordinated with worktops, sinks, bars and other stainless steel elements. Confirm dimensions, working heights, clearances and interfaces before manufacture or ordering.
Coordinate services before equipment arrives
Each item should have an agreed final position and a clear schedule of gas, electrical, water, drainage and ventilation requirements. Changes to one item can affect distribution boards, pipework, extraction, interlocks and neighbouring equipment, so revisions need to be controlled across the complete plan.
Plan the installation sequence
- Confirm the room, finishes and main services are ready.
- Mark out final positions and check access.
- Coordinate stainless steel and fixed elements.
- Deliver, position and connect equipment in the agreed sequence.
- Test, commission and record each installation.
- Complete the operator handover and outstanding-work list.
Protect serviceability after handover
A kitchen that looks complete can still create operational problems if isolators, filters or service panels are inaccessible. Review cleaning access and engineering access before final sign-off. Keep the equipment schedule, manuals, test records and maintenance recommendations together for the site team.
